  • ¾ cup warm water
  • ½ teaspoon salt
  • 1 cup refried red beans, warmed
  • ½ cup Honduran crema (or sour cream)
  • ½ cup crumbled queso seco

Instructions

  1. Mix flour, baking powder, and salt, then work in the oil and warm water until a soft dough forms. Rest 20 minutes.
  2. Divide into 6 balls and roll each into a thin round tortilla.
  3. Cook on a dry hot comal or skillet about 1 minute per side, until puffed and spotted.
  4. Spread warm refried beans over half, add crema and cheese, fold, and serve.
