- 3 cloves garlic, minced
- 2 tablespoons oil
- 1 teaspoon salt
- 3 cups water
Instructions
- Soak the djon djon mushrooms in the water for 15 minutes, then strain and reserve the dark soaking liquid (discard the mushrooms or reserve for stock).
- Sauté the garlic and epis in oil, then add the lima beans and stir for a minute.
- Add the rinsed rice, salt, and the reserved mushroom liquid, and bring to a boil.
- Cover and simmer on low about 20 minutes until the liquid is absorbed and the rice is tender. Fluff and serve.
